Lightly fry the garlic cloves and the bread in a little olive oil
Add the water and salt and boil
When the garlic is soft, toss in the two eggs and swiftly whisk or mix with a hand-blender. The eggs will
cook very quickly because the water is boiling
A variation would be to make a clear stock with the boiled garlic and salt and then fry an egg, place it on a
piece of toast and pour the stock over it
