First make the vegetable stock: Boil all kind of vegetables, including root vegetables and onions, with a little salt for at least 45 minutes. Strain the vegetables.
Fry some sliced and chopped mushrooms to mix in with the seitan balls.
Now, let's make the seitan balls
Mix the gluten flour, the bread crumbs, the chick-pea flour and all the spices in a large mixing bowl. Add the chopped up fried mushrooms.
Little by little add some of the vegetable stock and mix this first with a wooden spoon and then with your hands until you get a moist, maleable ball. Divide the mixture into smaller balls.
Heat the stock to boiling point and add the balls of seitan to the liquid. Cook for about 45 minutes. Remove the balls and cool them. Then, when they are cold, slice and freeze most of them.
